The upside-down signature in the middle is tough. At first glance it looks like...

Liondog, I posted them and waited for days, checking several times each day over the weekend, but so many people take their answers and disappear that I decided to post fair warning, and then erased the reply.

Chikusai to 竹齋 刀

The other is problematical. Hmmm... It kind of looks like Mocha coffee, モカ (Moka).

Hi Liondog, I have looked in Laz, and Shominsai seems to be the closest fit. However, there is stated in Laz, confusion as to whether there were three carvers working under that name or not.- probably because of inconsistencies in the style or signature. The "Min" Kanji on your carving differs from all the ones illustrated in Laz.
What I did find is a close match to the "Sai" kanji on your carving. Located on page 219 of Laz, Illustration #62, it is referenced to Issai's signature. There is one illustration of this Sai kanji under Issai, on page 518 of Laz. I don't know where that gets you - if that form of Sai is supposed to perhaps show a link between Issai and Shominsai. ( a bit of a stretch!) Perhaps someone with more knowledge regarding the possibilities will lend some light on the subject...
